Permaculture

A design system based around the principles of earth care, people care and the return of surplus. A holistic way of managing land to grow food based on the observatons of natural ecosystems.

A thriving forest or savanna has no need for tilling, chemical fertilisers or pesticides. A balance of diverse, healthy life is created over time, above and below the ground. In permaculture we aim to mimic this while growing an abundance of food.

Our Story

We are a husband and wife who have a passion for real food and nature. After growing our own food for many years and practicing permaculture techniques, in 2020 we started Bosco’s Garden, named in memory of my late brother, Conor ‘Bosco’ Hatton. (It was also ‘Bosco’s Café’ before that, set up by our friends, James Taylor and Philip Brennan.)

We started small, growing in a space of 150m2, selling veg to mostly friends and neighbours, learning as we went along. In 2022 we expanded the garden further an began selling to chefs in top quality local restaurants. Our humble farm shop in a tent beside the garden has now become very popular with Kilkenny foodies who are drawn to the rich flavoursome taste, colour and smell of our living food which comes from healthy plants and healthy soil in an abundant and diverse garden filled with all manner of creatures.

We feel it is important to keep the people who are eating our food updated on the processes we use here so you can REALLY SEE where your food is coming from. This is why we do in-person tours for our farm shop visitors as well as video tours on YouTube.
